Hi! 😀 We’re still here! I can’t gate-keep these noodles. Egglife Foods - thank you! This lunch took me 5 minutes to prepare. I used the roasted garlic egglife noodles, cooked chicken strips from Costco, and pesto. Easy, full of protein, safe on blood sugars, and delicious. Riv has big plans for this summer. Edited the post to add: today is Riv’s 12 year diabetes anniversary… The very best (pre-packaged) low carb cookie I’ve ever had! 🍋 Riv isn’t super interested in sweets anymore - but anything lemon flavored is our family kryptonite. These soft cookies were moist (😆) and chewy. In other Quest Nutrition news, the new recipe for the chocolate chip cookies does not work for River’s blood sugars. The old formula was so peaceful and predictable and the new one doesn’t work - even though the ingredients would lead me to believe they would work. His blood sugars spiked to an unacceptable level and would require a much bigger insulin dose. You’ll notice new packaging on the chocolate chip and the double chocolate cookies that have the new recipe. As with everything, your diabetes may vary.
