When the leaves start changing and the air gets crisp, nothing beats a warm bowl of something delicious. Today we're sharing our Hearty Harvest Veggie Soup recipe! Ingredients: 1 large sweet potato, 2 carrots (sliced), 1 cup red lentils (rinsed), 1 onion (diced), 2 cloves garlic, minced (or 1 tsp garlic powder), 6 cups vegetable broth, 1 can diced tomatoes, 1 tsp ground cumin, 1/2 tsp paprika, and 2 tbsp olive oil. Instructions: 1. Heat oil in a large pot. Add onion, cook 3-4 minutes until soft 2. Add garlic, cumin, paprika - stir for 30 seconds 3. Add sweet potato, carrots, lentils, broth, and tomatoes 4. Bring to boil, then simmer covered for 20-25 minutes until veggies are tender 5. Season with salt and pepper. Serve warm! We serve Clinton Eaton Ingham and Shiawassee counties. We combine experience and peer support in delivering services to people with disabilities and their families. On a larger scale we partner with community agencies schools and businesses to improve quality of life.
