When the leaves start changing and the air gets crisp, nothing beats a warm bowl of something delicious. Today we're sharing our Hearty Harvest Veggie Soup recipe! Ingredients: 1 large sweet potato, 2 carrots (sliced), 1 cup red lentils (rinsed), 1 onion (diced), 2 cloves garlic, minced (or 1 tsp garlic powder), 6 cups vegetable broth, 1 can diced tomatoes, 1 tsp ground cumin, 1/2 tsp paprika, and 2 tbsp olive oil. Instructions: 1. Heat oil in a large pot. Add onion, cook 3-4 minutes until soft 2. Add garlic, cumin, paprika - stir for 30 seconds 3. Add sweet potato, carrots, lentils, broth, and tomatoes 4. Bring to boil, then simmer covered for 20-25 minutes until veggies are tender 5. Season with salt and pepper. Serve warm!
